Blueberry Lemon Granola


Ingredients

  • 1 1/4 cups old fashioned oats
  • 1 cup steel cut oats
  • 2 tbsp hemp seeds (optional)
  • 2 tbsp flax seeds (optional)
  • 1/2 cup dried sweetened blueberries
  • zest of 1 lemon
  • juice of 1 lemon
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cardamom (or cinnamon and ginger or cinnamon and nutmeg or nutmeg and ginger- all in equal parts)
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 2 tbsp honey

Instructions

  • Preheat oven to 300 degrees. Line a baking sheet with parchment paper or silicone mats.
  • In a small bowl, whisk together lemon zest, lemon juice, vanilla, cardamom, salt, coconut oil, maple syrup, and honey. Stir in all oats, seeds and blueberries.
  • Spread on prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.
