Burrito Bowls
- 1 - 15 oz can black beans
- 8 oz corn kernels
- 4 cups cooked brown rice
- 1.5 cups of salsa
- 1 red bell pepper, (diced)
- handful cilantro, (chopped)
- Avocado (sliced or guac)
- Top with cilantro pesto
Drain and rinse the black beans and place in saucepan. Add corn kernels, red bell pepper and salsa. Heat on medium, stirring frequently until heated through.
Put on top of warm rice and top with cilantro and avocado. Drizzle with some cilantro pesto from this site!
