Cashew Bars
Layer 1 (Base)
- 1/2 cup cashew butter
- 1/2 cup maple syrup
- 1/2 cup oat flour
Layer 2 (Middle)
- 1/2 cup cooked quinoa
- 1/2 cup maple syrup
Layer 3 (Top)
- 1/2 cup Melted chocolate
- 2 tbsp coconut oil
INSTRUCTIONS:
- In a medium size bowl, combine all ingredients for the first layer (cashew butter, maple syrup and flour)
- Once combined, pour batter into a lined loaf pan and set in the fridge to set up.
- While setting, in another bowl, combine cooked quinoa and maple syrup.
- Pour mixture on top of first layer, and place back in fridge to set again.
- While second layer sets, melt chocolate and coconut oil together.
- Pour chocolate on top of second layer, and place in fridge one last time to set (at least 30 mins to an hour).
- Remove from fridge and loaf pan, slice, and enjoy
