Cashew Bars

Layer 1 (Base)
Layer 2 (Middle)
  • 1/2 cup cooked quinoa
  • 1/2 cup maple syrup 
Layer 3 (Top)

INSTRUCTIONS:

  1. In a medium size bowl, combine all ingredients for the first layer (cashew butter, maple syrup and flour)
  2. Once combined, pour batter into a lined loaf pan and set in the fridge to set up. 
  3. While setting, in another bowl, combine cooked quinoa and maple syrup. 
  4. Pour mixture on top of first layer, and place back in fridge to set again. 
  5. While second layer sets, melt chocolate and coconut oil together. 
  6. Pour chocolate on top of second layer, and place in fridge one last time to set (at least 30 mins to an hour).
  7. Remove from fridge and loaf pan, slice, and enjoy
