Chicken salad w jackfruit
Ingredients
- 2 cups raw cashews OR 1/4 cup vegan mayonnaise.
- 2 cloves of garlic
- ¼ cup unsweetened non-dairy milk
- 2 Tbsp lemon juice
- 2 Tbsp Dijon or Spicy Brown mustard
- ½ tsp Old Bay seasoning
- ½ tsp sea salt
- ¼ tsp ground paprika
- ⅛ tsp onion powder
- (We have also added 3 tsp of curry to this recipe for a chicken curry flavor! If you enjoy curry, give it a try!)
Put all the above ingredients into a high powered blender or food processor and blend on high for 2 minutes until smooth. When smooth stir together with the below ingredients.
- 14 oz can young jackfruit packed in water rinsed and shredded by hand or with forks into chicken-like pieces (or 1½ cups fresh jackfruit)
- 1/2 large sweet pepper cut small (red, yellow, orange, or green depending on your tastes)
- 1/4 sweet onion cut small (yellow, white or purple depending on your tastes)
- 2 carrots cut small
- 2 celery stalks cut small
- black pepper to taste
This is wonderful on salads, in sandwiches, or on crackers!
