 chick’n fajitas


1 can jackfruit in water drained and separated (cut or smashed- however you like to create your chicken texture)

1 sweet vidalia onion

1 sweet bell pepper (red, yellow, or orange)

taco seasoning (link)

salsa (link)

guacamole (link)

‘flour’ tortillas (mission gf vegan or flour vegan)

iceberg lettuce

sugared jalapenos (link)

pickled cabbage (link)

shredded vegan cheese


sliver onions and throw into heated pan on medium setting.  while that heats sliver pepper and throw that on top.  let them fry adding a touch of water if necessary.  dont over stir.  prepare jackfruit and once the onions are translucent from cooking stir in jackfruit, taco seasoning, and water one Tbsp at a time just to avoid sticking and allow for cooking.  stir to avoid burning but not too much.  while that heats up, in another heated pan throw on tortilla.  sprinkle some vegan cheese on if you want and let that heat up.  once the tortilla is heated, put it on a plate and top it with the jackfruit mix and all other ingredients you chose- try not to overfill- i know- its hard :)  pick it up and enjoy!  i try to only eat one at a meal but i always eat two.  or more.
