Cool Whip

1/2 cup aquafaba (liquid from 1 can)
1/8 tsp cream of tartar
1/2 - 3/4 cup powdered sugar
1 tsp vanilla

Put aquafaba in a metal bowl and whip with a mixer on high.  sprinkle in cream of tartar.  when you get peaks to form continue to whip add vanilla and slowly add sugar to taste.  Makes a large bowl.  Keep in freezer and top onto coffee and desserts!  Happy eating!
