This Homemade Vegan Greek Yogurt recipe is a revelation! Thick and tangy yogurt that is made with only 4 simple ingredients!


  • Ingredients

  • 1 cup raw cashews, (soaked in water overnight and drained)
  • 2 cans coconut milk
  • 1/4 cup tapioca starch
  • 2 capsules high quality probiotic (you will open up capsules and pour powder into the bowl)

Instructions

  1. Combine the drained cashews, coconut milk, and tapioca starch in a blender. Blend until silky smooth.
  2. Transfer the mixture to a saucepan on low heat and bring to a simmer. Remove from the heat as soon as it starts to simmer and let it cool.
  3. Add to a glass or plastic bowl (no metal - it will kill the probiotic!) and stir in the probiotic with a wood, plastic, or glass utensil.
  4. Cover the bowl with cheesecloth or tea towel and secure it with a rubber band. Let ferment at room temperature overnight or until desired tanginess is achieved.
  5. Add a little vanilla or sweetener or whatever your heart desires!
  6. Store in refrigerator. It will get thicker as it gets colder. 

Notes

This yogurt is ready overnight, but can be left longer depending on your desired level of tanginess. Give it a taste every 12 hours until you have reached your perfect level of tangy perfection.
